All along the occupied coast of the Lofoten you will find racks of stockfish. Stockfish is sun and wind dried fish, usually cod fish. This preservation method goes back to the times of the Vikings. The fish is caught in winter, and the head and intestines are removed before being hung onto sticks. Stockfish is particularly popular in Italy, Spain and Portugal.
